When Trevor and Christy Cavanagh established Smoked American Barbecue in Great Falls in 2018, they could not have anticipated the extraordinary support they would receive on May 28th.

Just a few days prior, they had been notified that PETA’s ‘Hell on Wheels’ Pig Truck would be parking in front of their business as part of their drive-by campaign which confronts passersby with images of pigs bound for slaughter and the sound of their panicked screams.

The day’s events were remarkable, illustrating substantial community endorsement that was both touching and inspiring. Upon opening at 11 AM, a considerable crowd gathered, eagerly awaiting their meals despite high temperatures. Within a mere three hours, Smoked American Barbecue sold out, having served over 2,000 pounds of meat.

Trevor, who starts his day at 2 AM, was hard at work pulling meat from the smokers, ensuring everything was ready. With a small staff of eight, they efficiently served around 600 people that day, demonstrating the power of teamwork. Volunteers came forward in droves, providing assistance with tasks like directing traffic and even DJing, creating a lively atmosphere that further encouraged patrons to join in the excitement.

Although law enforcement was present, the overall mood remained upbeat and positive. Many customers chose to support the local establishment, resulting in lines that extended down the street. While some individuals expressed concerns regarding their limited lunch breaks amidst long lines, others patiently awaited their turn, enjoying the vibrant ambiance and music around them.

The success of the day spoke volumes about the community’s commitment. Several people commented how gratifying it was to witness so many people come together and express their support for Smoked.

As the day concluded and the cleanup began, it became evident that what started as a hobby for the Cavanaghs had evolved into a significant venture far beyond the scope of a conventional restaurant.
